Biryani Curry Paste

Recipe Inspiration: Hyderabad

Information: Basmati rice infused with spices and cooked with lamb or chicken. 

Can be used for: Lamb, Chicken or Vegetables

Best accompanied with: Raitha (salad with yogurt) or plain onions

1. In a cooking pan, add 250g of chicken / lamb, 100g of yogurt, 50g of diced potatoes, 200ml of water (300ml if cooking lamb) and the entire contents of this packet. Cook until the chicken / lamb is cooked through and the curry becomes thick.
2. Spread the cooked basmati rice (rice recipe given below) on the cooked chicken / lamb in an even layer. Garnish with fried cashews, fried mint leaves, fried onions and 1 tbsp. pure ghee (clarified butter). Cover and cook on low heat until steam is seen escaping from under the lid (around 10 minutes)
Rice Recipe: Wash 250g of basmati rice. Add 650ml of water, 1 tsp of salt, 1 tsp of sugar and 1 tbsp. of oil. Mix well and cook until the water evaporates.
